Shake vigorously until the oil has completely combined with the rest of the ingredients. Set aside, and shake before using.
Salad
Prepare each of your vegetables, dicing the cucumbers, green bell peppers and red onion.
Finely mince the parsley using a knife.*
Add all your ingredients to a medium to large-sized bowl and toss.
Add the dressing and toss the salad until dressing is evenly dispersed. Taste and add more if you like!
Notes
*While you can speed up the mincing process of the parsley by using a food processor or blender, this actually takes away from the flavour which is why I recommend doing this by hand!
