Ingredients

Donuts

  • 120 g All Purpose Flour
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 50 g White Sugar
  • 1 tbsp Brown Sugar packed
  • 1/4 cup Milk
  • 1/4 cup Vanilla Greek Yoghurt *
  • 1 Egg
  • 30 g Butter melted
  • 2 Earl Grey Tea Bags
  • 1 1/2 tsp Vanilla Essence

Glaze

  • 1 1/2 cups Icing Sugar
  • 2 tsp Vanilla Bean Paste
  • 1/4 cup Milk

Instructions

Donuts

  • Pre-heat oven to 350F and spray a donut pan with cooking spray.
  • In a small bowl, melt butter & add earl grey tea leaves. Let this “steep” for 3 minutes.
  • In a medium bowl, whisk together flour, baking soda & salt, set aside.
  • In a large bowl whisk egg until lightly beaten. Then add melted butter & tea, and vanilla, whisking until combined.
  • Add both sugars and whisk for 1-2 minutes.
  • Add milk & yoghurt to the wet mix and whisk until combined.
  • Add your dry ingredients and mix until just combined.
  • Add your donut mix to a piping bag (or ziplock bag) and fill your donut pan.
  • Bake in the oven for 10-11 minutes, or until edges are lightly golden. Let them cool completely.

Glazing the Donuts

  • Add your icing sugar to a small-medium bowl & add half of your milk.
  • Add the vanilla bean paste and gradually add the remaining milk, checking that it doesn’t get too thin.
  • Dip your cooled donuts in the glaze and leave for 15 minutes to harden.

Notes

*Normal vanilla yoghurt can also be used.
