Greek Style Salad

Get ready for this Greek Style Salad to become your new favourite! It has all the best vegetables (and cheese of course!), topped with a super simple homemade salad dressing.

It was made out of my love for traditional Greek Salad and my dislike of tomatoes and olives. Then I decided that tabouli works with the same pairings so tossed in some parsley and voila. It was a VERY happy accident and we now can’t live without making this salad at least once a week.

What to pair the Greek style salad with

  • Falafels: one of my favourite ways to eat this salad is by creating a bit of a mezze plate with falafels, brown rice, and grilled halloumi.
  • Chicken: or really any other mediterranean-seasoned protein is the perfect match. I love this Lemon Chicken recipe from Little spice jar. 
  • On it’s own! Honestly, this salad is so moreish I find myself just eating most of it before we even serve it. 

Making the dressing

The salad dressing is a really simple vinaigrette that comes together in minutes! Simply add all the ingredients – white wine vinegar, lemon Juice, olive oil, salt, pepper, and oregano – to a jar or bowl. If using a bowl, then vigorously whisk everything until the oil has combined with the rest of the ingredients. Taste and season accordingly if needed.

If you’re using a jar, add the lid and shake until everything is combined. The best part about using the jar is that there are less dishes to do and you can use the jar to store it too!

Faq

Do I have to make my own dressing?

No, definitely not! I used the store bought Greek salad dressing for the longest time and it is very tasty like that. But, in saying that, the dressing takes less than 5 minutes to make and it is so worth it. There is nothing like a homemade salad dressing to make you feel fancy. 

Can I add other vegetables?

Of course you can, if you’re a tomato or olive lover than these would be great additions. You could also add a leafy base like baby spinach or rocket, this has become another staple in my house and makes it a little faster than chopping up the parsley.

How big is this salad?

It makes approximately four large servings. I normally make the full amount of salad for two people and will still have enough leftovers for the both of us the next day. It’s a great meal prep salad.

How do I use this for meal prepping?

To use this for your lunches throughout the week, make the whole greek style salad but leave the feta and the dressing off. This is because if the dressing goes on the salad it will get soggy after a few days. And fresh feta straight from the brine is just so much better! 

Storage

If you have any leftovers it will keep for 1 day in the fridge (if the salad is dressed). Either use an airtight container or place cling wrap over the top of the bowl you made the salad in.

If you follow the meal prep instructions above you can keep it for up to 4 days.

Ingredients

Vinaigrette

  • 3 tbsp White Wine Vinegar
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Oregano dried

Salad

  • 1 1/2 cups Cucumber diced
  • 1 Green Bell Pepper diced
  • 1/2 Red Onion finely diced or sliced
  • 1 bunch Curly Parsley minced
  • 1/2 cup Feta crumbled
  • 2 tbsp Vinaigrette or salad dressing

Instructions

Vinaigrette

  • Add all ingredients to a mason jar.
  • Shake vigorously until the oil has completely combined with the rest of the ingredients. Set aside, and shake before using.

Salad

  • Prepare each of your vegetables, dicing the cucumbers, green bell peppers and red onion.
  • Finely mince the parsley using a knife.*
  • Add all your ingredients to a medium to large-sized bowl and toss.
  • Add the dressing and toss the salad until dressing is evenly dispersed. Taste and add more if you like!

Notes

*While you can speed up the mincing process of the parsley by using a food processor or blender, this actually takes away from the flavour which is why I recommend doing this by hand!
